A worn water pump is the most likely. If the coolant is going down, the water is going somewhere.
The most common reasons an Oldsmobile Alero is overheating are a coolant leak (water pump, radiator, hose etc.), the radiator fan, or a failed thermostat. Coolant leak (water pump, radiator, hose etc.)
sound as if you have an air lock had the exact same problem with my mates fiat have a look online to see if there is a presure valve and just release the presure thsi is a bit of a pig to do as it may take a few goes to get the air out
Have you checked your coolant level? Is your car overheating? Sounds like it could be overheating. I have seen cars do that exact thing when they were ran completely out of water. Just thought I'd ask if you had checked that possibility out yet. Hope I could help you out.

If steam is coming out of the exhaust it is probably the head gasket. I take it you are adding a lot of water so you have a big leak or a blown gasket. Check to see if water is getting in the oil, another sign of gasket leak.
it probably the water pump...id bet it goes out shortly when you have to rev the engine like that it hurts the car and if the water pumpgoes out its going to fly apart and do more damage
Could easliy be your water pump. The coolant in the radiator isn't being forced through the engine by the water pump causing the coolant to be cool and motor overheating. A thermostat can also cause this problem, but I belive it's the water pump.
