SOURCE: I have a 2003 nisan maximawhen accelerating I hear

You hear clicking from the engine. If it increases in speed when you accelerate and decreases as you slow down, try listening for it in park. If the sound continues you need to take it to a shop. If the sound is only present when you are moving you need to have your CV joints checked.

SOURCE: 2004 Nissan Maxima temp gauge fluctuation

well the temperature control gage is connected to the engine block and consists of 1 wire for the reading of the motor heat either the sensor is going bad or you need to check your coolant levels in the radiator make sure the engine is cool before opening the thermostat cap to the radiator so not to get burnt ...also make sure the wire itself is not grounding out on the engine block to give the gage to give such a readout look to the engine and usually on the drivers side lower the plug wires you should see a plug with a wire coming from it ensure the wire is not rubbing on anything .

Why does my temperature gauge behave crazy when I accelerate, then goes back to cold after I let off the gas..like a speedometer? Its a 1996 Buick 3.1

indicates low coolant level in the engine
the sender unit has to be in the coolant to ground out properly to work the gauge and sudden acceleration moves the coolant away from the end so the ground circuit is broken

First of all those gauges on the dash are not accurate at all. You need a good temperature gauge to see what it is. You may be able to read the temp with a good obd scanner plugged in. From what you are talking about, if the temperature does come out to be an issue, you need to see if the impellor on the water pump is bad or loose or the hoses are collapsing.

check for a bad earth in the system . Possibly the earth strap on the motor or dirty battery terminals . IF the temp gauge will not work (bad earth ) and the ac stops working ( cabin air temp reaches setting) or the circuit has an earth problem switching off the ac. Check all wires for broken , not connected properly and check each earth point for clean and tight.

My Nissan maxima 98 won't start in cold morning

check the temperature sender for your fuel and emissions (not same as sender for gauge is most cases) if fuel injected, if carburated check choke. also ensure plugs and wires are in good shape

1998 nissan maxima runs hot, replaced the thermostat and at times gauge still register hot, what else could cause this?

Its possible that your problem also stay in the Engine Coolant Temperature (ECT) sensor resistance changes in response to engine coolant temperature.

Keep in mindthat the sensor resistance decreases as coolant temperature increases. This provides a reference signal, which indicates engine coolant temperature, to the ECM.
