After you replaced the thermostat did you run the engine with the radiator cap of for 20-30 minutes? If you did not then chances are you have an air bubble in your cooling system. If you remove your radiator cap and run your engine for 20-30 minutes that should solve your problem. Be sure you have extra water or coolant on hand when you do this because you may lose some during this process. If you want you can look in the tips section of this site. I have a step by step instructions as how to do this on there. I hope this helps you out.
I waited till the thermostat opened once at least. I know this because Periodically I would hold the return hose from the thermostat housing to the radiator and felt it got hot to the touch. I topped it off and called it good to go, should I have waited longer?
Yes you probably should have waited longer. I have seen it take as long as nearly an hour in order to get all of the air out of a cooling system. That is the longest I have ever seen, but as a rule of thumb you should always allow the vehicle to run for at least 20-30 minutes allowing the thermostat to open and close multiple times.
