2003 Toyota Highlander, thermostat

Easy. Straight forward job. Just remember these couple things: use a TOYOTA thermostat, and make sure that the little "wiggly valve" is pointing straight UP when installed, and make sure thatyou bleed all of the air from the system.

Help! I cannot turn off the heat (not fan) in my Highlander

look in the engine bay for where the water pipe enters the passenger compartment to get an idea where it might be coming in from the passenger compartment view. The back of the heater should have a cable that connected to a valve on the floor / firewall where the water pipe comes into the passenger compartment. Check the cable is connected to the valve. It may be broken where it connects to the valve. you may be able to take off the side trims on the center console to get a better look.

Why car idles out at high altitudes.

What do you mean by "idles out"? It dies? Perfectly normal, as at high altitudes air is thin and car runs too rich. One might think ECU would know this, but I think your car uses air mass flow to set fuel curve, rather than MAP.
