DOES COOLANT LEAK OUT OF THE COOLANT SENSOR WHEN IT IS BAD?
If seal/tape goes bad it can leak..I suppose if something is cracked sensor can appear to leak..if temp gauge seems to work and u think sensor threads leak reapply some thread tape and put in..
If gaugedoesn't work then maybe sensor is bad/crackedt
When replacing radiator and thermostat in northstar engine ...is it necessary to disconnect the battery?
Robert , not really if you do disconnect battery MAKE SURE YOU US A MEMORY SAVER ,its a small battery supply that plugs into cig lighter and keeps all data fresh .did you check tention on water pump drive belt, ,is water pump good ,and after replacing radiator did you purge out all the air.,iknow these north star motors very well and keeping a good handle will keep it alive for years but these motors have a BAD track record of over heating and blowing head gaskets .

What is the normal operating temp in cooling system of a northstar engine?
For my 1997 Cadillac Deville limousine with 4.6 L Northstar it should be 196 to 205 deg. And top out at no more than 230 deg. F. Check multispeed fans for high speed turning over and antifreeze fluid level in overflow tank. Also, check for head gasket leaks through tailpipe which will show up as steam when you start the engine.

the coolant temp sensor lets the cars computer know that the engine has warmed up and to allow the fuel injection to go to what is called "closed loop mode" this is where max fuel econ and low emmisions are available , the driver can know car is not in closed loop mode by the higher idle that cpu adds to allow car to warm up faster
also on cadillacs/buicks only it lets the air condition system go to open vent where it allows fresh outside air to be drawn in to cabin
How many gallons of coolant does the northstar engine hold?
Coolant should be mixed in most cases to a 50% concentration, meaning one gallon of undiluted coolant will provide two gallons of diluted coolant. Most engines will hold 2-3 gallons of coolant mix. I normally purchase two gallons of undiluted coolant. I pour the first gallon of undiluted coolant into the radiator, then fill the empty bottle with water and add that to the radiator as well to make it a 50% mix.. Then, I pour half the second bottle of undiluted coolant into the empty coolant bottle, and then top both off with water to make two gallons of 50% mix. I then add coolant to the radiator as needed until full, keeping the remainder for topping off later as air purges itself form the system.
What signs and or sounds of a blown head gasket
When the gasket blows, it may allow coolant to get into the oil. Pull the dipstick, if you see a change in oil colour and an increase in oil level, the gasket leaked. As for noise, ask the dealer.
