ford escort ,europeon model or american model ,if the europeon model then was it a new switch fitted ?? sounds like the switch to me as its a common fault and as such obtaining spares from the scrapyard could lead to buying a switch with the same fault .
Check the exhaust for obstructions. The catalitic converter may be plugged, this would cause a feeling as if you are pressing the brakes and gas at the same time
The inertia switch should be under the dash on the passenger side. Sometimes it is in t he kick panel near the door.You may need to check the circuits on the pump relay to find out if the pump has power.
It is very likely the electric in tank fuel pump had failed, they last around 100,00 miles and then the bearing start to wear out and they stick. You can try banging on the gas tank while someone cranks the engine over to unstick the pump.
Tac and odometer are normally controlled by a cable. Check cable. Maybe came undone, most likely need to replace cable or might be able to just spray with w-d 40 and might get lucky
