How do I test the ECU on my 2006 VW Jetta with TDI engine?

The best way to find your problems is to hook up a scanner and see what is happening. It is common for the accessories to shut down when drivability problems arise. A scanner can isolate a bad running cylinder or bas sensors.

2010 caravan ac wont work from switch,

You say refrigerant is "full", but it can have too much. If you have attempted to "top off" your refrigerant then you may have too much, keeping the compressor from engaging. If you haven't messed with it and the compressor just stopped engaging on it's own then I would start checking the relay, fuse and the ac switch.

2000 GRAND PRIX GT 3800 DTC P0300

The tune up may not be part of this as the issue you have would have possible started back then. Misfires can also be caused by fuel starvation issues and air intake issues. Were there any other DTC's? You could have an issue somewhere in the air intake system such as a bad sensor or you could also have an issue with the fuel supply to the engine. P0300 refers to a 'Random' misfire so it is unlikely to be one specific cylinder causing trouble. You are probably going to need to look at areas like the fuel rail and futher back in the fuel and Air intake systems. There is a simple test for the injectors you can do if the engine runs and idles. Using a very long screwdriver or a long thin piece of metal rod you can listen to them. **NOTE** Be careful as you do this as you will be doing it with the engine running! Carefully put the tip of the screwdriver on the body of the injector and put your ear to the end nearest to you. NOTE This will be louder than you expect its going to be. You should hear a very rapid, even ticking sound. With the vehicle OUT of gear and with the parking brake ON get a helper to GENTLY press the gas pedal on and off again once. The ticking should speed up and slow down with the engine but still be a regular pattern. Repeat this with all of the other injectors. Any that are uneven or sound different to the others could be something to investigate a bit more.

Why does my AC only work on high please?

That's usually caused by a burned out blower motor resistor. See this post on what it does and how to fix it. https://ricksfreeautorepairadvice.com/blower-works-on-high-speed-only/

Serpentine belt route on a 3400 without AC

Without FULL 'year make model', it is all guesswork, or do you really have an AC Cobra, (the category you posted to)? The Google Search Query for this is year make model no AC Also it is better to purchase an AC Bypass Pulley. It keeps the same route and belt length. https://www.google.com/search?q=Serpentine+belt+route+on+a+3400+without+AC ..

After replacing the AC fuse for the third time, it kept blowing out ....windows & AC work! YAY!

It is likely to go again because you haven't found out 'why' and corrected it. Fuses blow when there a dead short to ground or something is causing more resistance than the fuse can handle.

How do I recharge ac with refrigerant what's the proper method

you can't do it yourself. Suck all the gas out with a gas recovery machine. Create a big vacuum. Add gas by weight using an reverse scale. As gas leaves the scale, making the gas bottle lighter, the scale records the gas that has left. This must be done with the engine running and the AC on full. Refrigerant must be added as gas, no tipping the bottle upside down. Go to the Scotty Kilmer YouTube channel. He did a video in the last few days for topping up the system. I think it was a video of things to buy. I found it. https://www.youtube.com/watch?v=J-tx3j81QQk&lc=UgxEpVddNeI467zx2xN4AaABAg.9_00DhjShJo9_2RIlrkQhh ..

From the diagrams I've been able to find on that model, it should be near the heater core on the passenger side of the car closest to the cabin, under the hood.

2012 for escape air not blowing cold

It is done by weight of refrigerant gas, not pressure. Take it somewhere. They suck the gas out for recycling, until there is a vacuum, then put the bottle of liquid gas on subtractive scales and let the gas in slowly as it vaporizes until the correct weight of gas is in there. If there is too much gas in there it may have hydrolocked and ruined the compressor. The gas is a liquid at the compressor Condenser (high) side and only turns to gas in the evaporator (low) side in the vehicle. Check the fuses and relays.
