How do i fix a discolored stainless steel roasting pan that was accidentally left in the oven during self cleaning

Considering the number of stained stainless steel pans I have seen thrown away I don't think any method is successful as the discolouration caused by overheating is likely the first few microns of the surface have been penetrated by a naturally occurring oxidisation and any contaminants present at the time. As metal is heated the surface reacts with the oxygen in the air and the resulting oxidisation changes colour depending on the temperature. A lot of variables are involved but a light straw colour can form in the first few atoms of the surface at a temperature as low as 350F and deep yellow/brown by around 450 (in a clean atmosphere). To remove the staining the surface of the steel would have to be removed...

Need Griddle pan (13X11 inches) for Toster Oven Model AC25CWM. If it possible I need made of stainless still (not aluminum).

I don't think it matters what material your replacement grill pan is made from as it heats by radiance/conduction and not induction. Most common grill pan material is vitreous enamelled steel with a stainless or chromed steel trivet though aluminium is lighter to handle. I have never seen a stainless grill pan. I note you asked about a griddle pan and wondered whether you meant grill pan. A griddle pan is generally used on a hob though there would seem no reason why it should not be used in a toaster oven. Cast iron is the best material for a griddle pan and I think if it was preheated on a hob it would perform admirably, having a machined flat base it conducts heat upwards very efficiently. The aluminium griddle pans I have seen have roughly the same shape underneath as the top making them more suited to a gas hob or fire due to the reduced flat area...

How to clean stubborn burned on stains in the stainless steel oven

You need to use ordinary soap as a lubricant and a fine steel wool to buff the steel surface. That will remove any built up surface debris completely but you may still have some discolouration of the metal remain. An automotive polish designed for polishing stainless steel and aluminium (available from auto parts stores) might finish the job for you and remove much of any remaining staining but I would not use a chemical of that type on an inside surface that is used for cooking your food. (Same issue with those dreadful chemical and toxic oven cleaners). Unfortunately, with use of the unit and heat , you will get some residual discolouration of the stainless steel.

The "0" and "9" buttons have suddenly decided to stop working. Is there any quick troubleshooting tips that might fix them before deciding I need the whole Control Pad replaced?

Disassemble and clean with alcohol and q tips the contact areas under the "0" and "9" buttons respectively. You can also increase their conductivity by using a #2 lead pencil and rubbing the lead on the affected areas.

What kind of glue should i use to attach sheets

I would use liquid nails on the wall once you put the glue on the wall you trowel it down to make it all even then you put the stainless up.
