On a 2002 Pontiac Grand Prix 3.8 liter, what size belt do I need to bypass power steering.

You can't do that. Without power steering you won't be able to turn the steering wheel. In the old days, it used to be power 'assisted' steering, but now the steering pump does all the work. You would fail at turning the first corner.??Get a friend to drive you to the junk yard.??..

2006 Pontiac Grand Prix, no crank. Info center reads low fuel, half of the fuse box under the hood has no voltage.

That sounds very strange. Sounds like you have a flat battery. What is the battery voltage from the positive terminal to a grounded bolt on the engine or chassis? It sounds like you may have parasitic draw where something is draining power when the ignition switch is supposed to be off? Ignition switch wrong type or mis-wired possibly? You need a good auto electrician with a pro grade scan tool computer, and the ability to read factory wiring diagrams. https://www.google.com/search?q=mobile+auto+electrician+near+me ..

2006 Pontiac Torrent is running hot. I changed the radiator because it was leaking. All the hoses are good. I checked the vacuum hoses they are good also.

It is likely to be neither! It was running at the correct temperature before, so all was good, you just has a leak that needed fixing. Your problem is likely cause by air in the system which is preventing coolant circulation. Make sure your radiator fans come on once the engine comes to temperature, as the coolant sensor must have been removed. https://www.fixya.com/cars/r29872074-vehicle_cooling_system_no_heat ..
