I work on alot of Jeeps and the issue i ran into with this is connections, check all of your ground cables that are under the dashboard behind the kick panels on both passenger and driver side quite often they come loose.

Remove the pump and check if the seal is installed properly (it's a small o' ring) it's found at back of the pump where you connect the hydraulic pipe. It can be a nuisance if it's worn out or inappropriately fitted.

Could be fuel delivery. Partially clogged fuel filter or weak fuel pump. Changing the fuel filter is a challenge but possible for a do it yourselfer. This is where I would go next.
Is it possible to be ready to check for fuel pressure or spark when it stalls?
If fuel pressure is within range when it stalls, then crankshaft sensor could be breaking down due to heat.

Check the firing order and plug wires. A wire might be crossed or you might have a bad wire. See attached for firing order. Also, run the engine at nigh in the dark and look for blue sparks along the plug wires. If you see them, you need new wires.

Check to see that front drainage holes in the sunroof track are not clogged. They should be on either side of the sunroof. If clogged the water will back up toward the center and leak inside.

U - codes have to do with the C.A.N. controller area network ( serial data network ) Do you know anything about These communication networks ? This is how information is shared between control modules - PCM - engine computer , instrument cluster , BCM - body control module , skim module - anti-theft etc...etc.... You have a scan tool ,now get some service information so you can look up the code an follow the diagnostic procedures for the codes . , or go to an click on Jeep an pay 30 bucks for 72 hours of repair info. Or take it to a qualified repair shop.
