You have 2 options:
1. Use the base of a plane model and put cake on top and around it, but for that you need a very flat, large plane. See the link below for an example.

Yes, you can totally get creative using a store bought mix as a base. Just be careful with the quantities as if you throw in too much stuff if wont cook well and you will lose the whole essence of the cake. Strike a nice balance and don't forget that you can always put things on the top of the cake to add a bit of visual flare, such as walnut pieces or thin apple slices.
There are lots of causes of cakes issues, from something simple like over cooking to over beating of egg whites.
