Make sure your Beater can slip in and out of the Beater Shaft
easily. Do not force the beater onto the Shaft if the shaft is bent.
If it cannot be removed easily by hand, use a soft rubber mallet
(not a steel hammer) to slightly tap the beater so it can be moved
up and down the shaft or from side to side. Then you can easily
turn the beater left and remove it from the shaft.

From Kitchenaid Manual:
To Attach Flat Beater, Wire Whip, or Dough Hook
1. Turn speed control to OFF.
2. Unplug stand mixer or disconnect power.
3. Tilt motor head back.
4. Slip beater onto beater shaft and press upward
as far as possible.
5. Turn beater to right, hooking beater over pin on shaft.
6. Plug into a grounded 3 prong outlet.

To Remove Flat Beater, Wire Whip or Dough Hook
1. Turn speed control to OFF.
2. Unplug stand mixer or disconnect power.
3. Tilt motor head back.
4. Press beater upward as far as possible and turn left.
5. Pull beater from beater shaft

Beaters are hitting each other and jamming up

One of the beaters had jumped a gear. I understand they are nylon gears. My wife's had the same trouble. I unplugged the mixer, removed the bowl and install the beaters if you can to see where they are touching. They were two cogs off. I grapped the left (red) beater firmly and twisted it to the left. It took a couple tries and turning on the motor (with out beaters) to find the spot where they had skipped. In the end the left beater jumped back one then two teeth and now the beaters aline properly.
This will happen again with heavy dough, etc. now that the teeth are worn in that spot. Use a bread machine for the heaver dough. IMHO

How do you use the bread dough beaters?

Retrevo has link to the Instruction manual for the MixMaster 2369 here: http://www.retrevo.com/support/Sunbeam-2369-manual/id/952ci068/t/2/ . You will need to enter a code to download the file. You will also need Adobe Reader or a similar program to read the file.

I hope this helps.

How do i insert dough hooks into stand mixer professional 600??? There are no holes.

Your Flat Beater, Wire Whip and Dough Hook attachement ends should
look the same. They are inserted onto the beater shaft and held in place
by a single pin. The reason you cannot attach the dough hook to the
beater shaft because it is the wrong hook for your particular model.

What can you use for a hobart h600

The Hobart H600 is a 2 horse power, 60 quart mixer, it can be used for many things in the kitchen. It can be used to make about any kind of food that needs mixed, wiped or kneaded. It works well in a pizzeria for all facets of making pizza from the dough, to shredding the cheese with an attachment, to a restaurant that makes mashed potatoes and fresh bread, to a full service bakery.
However, the biggest thing that you need to know is the capacity of the machine. As overloading the machine can cause damage that may be costly and take a technician to fix. I do not know what attachments you currently have so I will go over a few of them.

The main attachments are a Wire whip, Flat beater, and Dough hook. There are three different types a "D" wire whip (has many wires and is evenly spaced) this is used to whip egg whites, whipping whip cream, etc. The "C Wing" (has six tines in it) is used for items that are heavy for the D wire whip, like whipping potatoes or icing. The last is the "I" whip is similar to the D wire whip just with less tines. The flat beater is used to mashing or mixing examples are mashed potatoes before they are whipped, cake mixes that do not require whipping, batters and icing. The Dough hook is used for kneading dough examples are pizza dough, bread dough, etc.

The biggest thing when using your mixer is to know its capacity for the material that you are mixing. All though this is one of the bigger machines it still has limits. You should refer to this the following link for the capacity of your machine:
https://my.hobartcorp.com/resourcecenter/ProductDocumentation/F-7701.pdf

There are also a few attachments that can be put on to the No. 12 attachment hub. A few of these are a vegetable slicer-grater and meat grinder.

Professional 600 - makes loud noise when mixing, often stops as it blends 8 cups of bread flour and "needs a break", flat beater seems to get caught on bottom of bowl - this mixer is 1 yr. old!!

Several things:

The Professional 600 has a metal gear housing with a metal gearing. Because of this, the Professional 600 will generally run louder than other stand mixers that may have a nylon/metal mesh gearing.

How long is the bread dough being mixed for? Kitchenaid stand mixers must be used on speed 2 for bread doughs, using the spiral shaped dough hook, and mixing for no longer than 7 minutes.

If the flat beater is getting caught on the bottom of the bowl, pleasure assure the bowl is being seated correctly. You will place the bowl on the mixer arms on the left and right hand side. You will also want to take your fingers along the back of the bowl, where it butts up against the base of the mixer, and press downward. You will hear an audible click as the bowl falls into a spring latch and allows the bowl to sit flush and secure. If this is not being done, the flat beater may strike the bottom of the bowl.

If this was not the cause of the problem, please consult your Use and Care Guide about the beater to bowl adjustment. This is an easy adjustment made with a flat head screwdriver that can quickly correct the problem of a flat beater hitting the bottom of the bowl.

Used the bread kneading hook, after 10 minutes, smoking

The mixer motor has probably overheated, as proper use and care was not being followed with the stand mixer.

Bread doughs are recommended to be mixed on speed 2 only and never for longer than 7 minutes. With the resistance of a bread dough that is provided against the beater, mixing for over 7 minutes may overheat mixer and cause smoking.

Please consult your use and care guide to refresh your memory about how to properly use your mixer for making bread doughs.

Beater jams

You are going to DESTROY YOUR MIXER by kneading dough with the flat beater. Read the directions. They spell it out in big letters. Only use the dough hook for dough; only use speed 2.
If the mixer generated enough torque to knead dough with the flat beater (it doesn't), it would tear up and overwork the dough. As it is, you're lucky you didn't strip a gear.
