Hi Madre - Looking at the manual I can understand your frustration.
To turn the touchpad on and off you have to use button #6 (see below). Most certainly not intuitive!

Try updates from HP - Software and driver downloads "Synaptics" . This program will give you the features needed to disable or adjust the touch pad features.

After installation you can access the program through Start, Control Panel, and Mouse. On the top of the active mouse window to the right select the tab "Device Settings" (the one with the Synaptics symbol next to it). Select the tab labeled Settings - you should have a column of options to expand on the left. On select "Tapping" (do not expand it) you should have the ability to uncheck the box for enable tapping. this should correct the problem. There are many options with the Synaptics software to enhance your mouse and touchpad........
