Setting features on calculator

How do I clear each individual equation when I am not using the paper roll? I only see a "CE" key but not a "C" key like I am use to. When I use the paper roll I use "*" key to clear.

I also want to set the tax to 7.75% but I am not having any luck. I go to "rate set" key in 7.75% and then go back to GT am I missing a step between the setting and GT?
