This sounds more like the dryer coils are failing. They tend to fail as they heat up. They are inexpensive and easy to replace. Here is a link that should help Replacing the dryer coils If you are sure it is overheating this would be the cycling thermostat that would be the problem. It is unlikely that it is overheating. The only way to check for overheating is by placing a thermostat inside the dryer. Most run around 165-195 f depending on the heat setting selected. Your gas valve coils are defective.
Once they get hot,the resistance changes and does not allow them to remain on or reset.
Change out the gas valve coils.
