I am using the old recipe from my 20 year old Black and decker book, in my new new B & D bread maker and it falls flat on top? In the old machine it rises beautifully and stays there, why? new bread machine is Model 2200

You may find that one machine (the old one) stipulates Active Dry Yeast and the other one (new) stipulates Rapid Rise Bread Machine Yeast. What are the main differences from your old recipe and a similar recipe in your new recipe?

use 2 tablespoons less liquid in a 2.0 lb. loaf, 1.5 less in a 1.5 lb. loaf and 1 tablespoon less with a 1.0 lb. loaf.....start there and let me know what happens

Hi, A bread machine made 14 years ago was of very high quality. Black & Decker does not make bread machines anymore, but buys them in a foreign country and slaps the Black & Decker name on it. The program may be different, the heating element may have changed, and possibly the paddle size and time of kneading and cycle times could have have changed. You will have to experiment some more ( I know you have, and it's expensive and frustrating) to change settings to try and make it work for you. Talk to your friends who may have a bread machine and try it on theirs, or give me the recipe and I'll try it on my Sunbeam...that would be interesting. Hank

Do you still have your old machine? If so try one of the recipes that failed in your new machine. If it fails again you may have bad ingredients. Old yeast, old flour, etc....that's the only thing I can come up with based on what you have described. If the loaf in your old machine turns out well then you should return your Black and Decker. You can find good deals on ebay on used bread machines that are tested and they show the loaf of finished bread. I have some for sale there, that I have baked in.

Hi, You can definitely make white bread in your machine. Just google for bread machine recipes and I'm sure you will find something. I actually went to a second hand book store and found a cool recipe book. I use this one more than the recipe book that came with my machine. Hank
