What's a "spoon"? What's a "cup"?? It takes 2 tablespoons of proper grind coffee per 5 oz cup to make proper coffee! I'm amazed that people make and drink coffee water instead!

Check where the water comes out under the brew filter. It sounds like you may be missing the sprayhead. It is a round metal or plastic piece that is screwed on to the water dispense area and acts like a little showerhead forcing water evenly over the coffee grounds. If it is missing, the coffee will be weak. Check the water temperature. If it isn't hot enough, the coffee will be weak.

Also the "cup" measure on different makers is not the same between brands. A standard "coffee cup" is 6 oz instead of 8 as in a fluid cup. A commercial pot holds 12 fluid cups to a fill line about at the level of the top of the printing but the pot actually holds 16 fluid cups when filled to the top so more coffee would be needed to make the same strength.

When I put in, 6 cups of water, if the 10 cup Bunn coffee maker after it has sat overnight, it only expels about 4 - 4.5 cups. I don't think it can all be evaporating or being absorbed in the grounds can...

look for water leaks around pot. Otherwise do a daytime brew to compare your difference between the amount poured in and what comes out. Please note that less water should mean using less ground coffee. Suggest 1 heaping table spoon per brewed cup.

Weak coffee is the result of brew

Basing on personal experience (you can find more on Google probably), solutions are:

On percolated (filter) coffee machines:

Check water temp, if water temp is insufficient , most common is scale heating element , faulty element, faulty thermostat.
Check if water is dripping right at the center of the filter, if it is dripping on one side because the orifice is clogged, that can result in weak coffee.
Coffee blend not well distributed on filter basket.

On Espresso machines:

Check water temp, same as filter coffee machines (thermostat element, scale on heating chamber).
Ensure that coffee is filled correctly in the filter cup (fill at level), and well pressed.
Ensure that the coffee mixture that you are using is not too coarse, buy the apposite one for espresso.
Ensure that you are not leaving the machine brewing for a time that is too long, and Italian coffee cup is very small, approximately one regular shot.

On the hob moka pots (espresso, Moka and Bialetti type):

This are the trickiest ones, you need art and practice to get a good espresso with a Moka, but when you learn, the result is better than what you may get with an home electrical espresso maker.
The frame on the hob must be not too strong, and the mixture coarse but well pressed, with water at level tag, or you will get a weak coffee.
On Mokas a good strategy is keeping hob at minimum, and turning up the flame at top when coffee starts coming out.

French and turkish cafetieres:

Ensure that you put enough coffee, water hot enough, and that you left the infusion enough time to get a strong coffee.

Note: insufficient pressure and clogged lines on electric machines never give you a weak coffee, exactly the opposite.
Not pressed mixture always gives weak coffee, but too much pressed mixture may give you coffee with bad taste.

Weak coffee is the result of brew

Since it is "brand new out of the box" check for plastic burs (pieces of plastic improperly hanging around
openings along flow of water) throughout unit, and use more coffee than recommended for your taste of
what a good cup of coffee should taste like, since that varies from individual to individual. If you are using
packets, try using TWO. Experiment, Experiment...........

Not getting all the water

Faulty check valve inside the tubing at the bottom of the unit. This is the tubing conveying water from the outlet of the tank into the heater coil prior to going into the coffe basket.
I have the same problem but cannot find replacement check valve.
