Model number KM 500 MAE is not making ice and this constant beeping noise every 3 seconds
Most likely(50% of the times) Your Ice machine need a real cleaning. not just run clean cycle with ice machine cleaner. every 6 month call HVAC-R guys - machine will last half time longer if u schedule proper maintenance with them. I have seen It all: people try to call "friend", or someone who "knows" how this machines work. Real clean would take up to 3 hours for people who know what they doing. Here is one of my videos, when 3 beeps - long freeze cycle is not common and all others would offer You to get a new Ice Machine. Bill to the owner was 950$, New Machine 3450$ plus labour to install 600$.
I believe if you remove the thermostat wires and put them together and retry it you'll be making Ice, then get you a new thermostat. Please rate me accordingly and good luck.

As part of the EverCheck System, the beeps are to help diagnose problems with the machines. Built-in safeties shut down the unit and have alarms as listed below:
Number of Beeps Every 3 Seconds Type of Alarm and Notes
1 Beep High Evaporator Temp. (temp > 127*F/ 53*C)
Check for harvest problem (stuck HGV or relay), hot water entering
unit, stuck HM, or shorted thermistor.
2 Beeps Harvest Backup Timer (harvest>20 min, 2 cycles in a row)
Check for open thermistor, HGV not opening, TXV or LLV leaking by,
low charge, inefficient compressor, or WRV leaking by.
3 Beeps Freeze Timer (freeze > freeze timer setting for two cycles in a row)
Check if float switch stuck closed (up), WB leaking by, HGV leaking by,
PM not pumping, TXV not feeding properly, LLV not opening, low
charge, HM not bypassing, or inefficient compressor.
To reset the safeties above, press the "ALARM RESET" BUTTON
WITH THE POWER SUPPLY ON.
6 Beeps Low Voltage Red LED turns off if voltage protection operates. The control voltage
7 Beeps High Voltage safeties automatically reset when voltage is corrected.
