Adding and deleting songs should be fairly easy, using iTunes.
You can either:
-Sync your playlists to your phone. (when you delete a song from a playlist and sync it deletes the song from your device as well)
-Manage your music manually (you need to check the "manage music manually" box). It is pretty straightforward, just drag and drop any song from your library to your iPhone to copy it, or press delete on the ones you no longer like to keep on your phone.

1) Does your vehicle have an aux input jack (1/8")? If not, then you'll have to do it the old fashion method. Purchase an iPhone cable that uses the RF signal method to play music on your cars stereo by tuning to an specific band and it will work just fine.
