Need model number to really help. generally, if you turn on the number 1 and 2 dip switches on the control board, it will give you the longest possible defrost.

My hoshizaki ice machine KM-900mrf model beeps 3 times and stop making ice. After reset it starts, but stats beeping again after an hour.

Have a look at the side of the evaporator; there is a probe (thermistor) attached to it that tells the control board when to initiate the harvest cycle. make sure it's clean and attached properly and doesn't need replacing. If hitting the float switch initiates the harvest cycle it sounds like you have a blocked/ scaled water tube or switch housing. take off the bottom of the switch assembly (black rubber bit) and clean through to the water chamber. run a cycle of descaler before trying again.

Hoshizaki km500mae just has continuous water flow through it. The only time it shuts off is when it is harvesting ice. This water is causing a huge water bill. Any suggestions?

You have an assembly that closes the water down when it is harvest ice. It is broke or out of adjustment. Have a rep look at it.

We have a hoshizaki ice machine 901mwh the ice cubs seems to be getting stuck in the evaporator area and pileing up on it self and freezing bake up

The main problem with Hoshizaki machines is if you are in a hard water area, if so do you have a good quality water filter, it may need changing. A quick way to check for calcium ot lime deposits in the machine is
1. Turn it off, run you clean hand around the area near the evaporator, are there any rough or flaky deposits there, if so you may need a chemical descale, contact a reputable fridge guy to do this for you.
2. The swinging arm motor may be faulty or possibly the ice sensor which controls the harvest cycle. If this is faulty sometimes the tray goes back up before the ice has slid off.
3. If the machine is situated in a cellar or other cool (less than 10 deg C / 50 deg f) this can sometimes affect the harvest cycle again to set this you need a tradesman.
4. Does the water flow properly over the lower part of the mould plate during a harvest cycle, the pipe can become blocked or dislodged.

Hope this is helpful

Unit makes ice, full evaporator,is very slow, maybe 45 mins. from harvest to harvest. Why so slow?

Possible causes are many
Things to check
  • If air cooled, is the condenser coil clean and is the condenser fan running when in ice production ? Is the area extremely hot where the ice machine is located? If water cooled, is there adequate water pressure and is the water regulating valve set properly?
  • When the system switch is in the off position is there any water running ( if so the inlet water valve may be stuck open)
  • When in ice production, is the small tube that feeds from the hot gas solenoid hot? This tube comes from a valve at the back of the unit and feeds over the compressor and into a tee near the insulated Tx valve. This line should be hot during harvest and cool shortly after harvest.
  • Has the float switch assembly been cleaned. this is a cylindrical unit beside the water pump,It can get plugged with minerals and not initiate harvest
  • The system may have a refrigerant charge problem (short) or the compressor may be weak, at which point diagnosis would need to be done by a refrigeration tech
Hope this helps

Hoshizaki KM-900MAH Ice Maker it sounds like it is making ice and is freezing it but its not dropping ice any solutions?

when the machine first starts, it begins it's cycle in the harvest mode. If the float switch is stuck, it stays in the fill/ harvest mode. Compressor runs and water circulates but no ice is being made. I'd start looking there. Turn the machine on, let it run for about 3 minutes, they very lightly tap the float switch. If it starts making ice, bingo, theres your problem. Let me know if I can be of any more help.

Ice Cubes won't drop out

The thickness probe should be approximatly 1/4 inch off of the evaporator.Sounds like you might have loose grids on the evaporator.turn the unit off and remove the curtain.use a flash light and inspect the grids. There should not be space in between the joints,if there is the ice will freeze behind the grids and not properly release when in harvest. Also gently pull at the grids,if they pull towards you or wiggle then they are separating. I have removed one of the grids and had the unit continue to run for sometime until the evaporator could be replaced. The plating being spotty causes release issues as well. Finally check the level of the machine, front to back and side to side. Not being level will also cause release problems

Hoshizaki Ice Machine Model KM-500MAF

(Quated From Hoshizaki Technical Bulletin)
An alarm code of 3 beeps
every 3 seconds means that the control board has shut
down on the 60 minute freeze cycle back up timer.

The “E” control board has a 60 minute timer that starts at
the beginning of the freeze cycle. If the float switch fails
to open and start the next harvest within 60 minutes, the
board will automatically start the harvest cycle. If this
occurs in two consecutive cycles, the control board will
shut the unit down on the manual reset, freeze cycle
back- up timer. The yellow fault LED marked “60 min.”
will illuminate. This safety is designed to help prevent a
freeze up of the evaporator.

Once you have identified the 60 minute alarm, there are
several things to check. Reset the alarm by depressing
the white reset button to the right of the fault LED’s.
This must be done with the power “ON”. Now check the
float switch to see if it is stuck in the up position. A stuck
float can occur if scale is present on the reed switch
shaft inside the housing. To check it, drain the water
reservoir, unplug the black float switch connector (K5)
from the control board and check it with an ohm meter
for a closed switch (zero ohms). If the float switch is
sticking, clean it with ice machine cleaner or replace it as
necessary.
An inlet water valve which is slowly leaking by during the
freeze cycle can cause a 60 minute alarm. If the inlet
water valve is stuck wide open, it is unlikely that any ice
will form on the evaporator. Check for a slow leak by
allowing the unit to cycle into the freeze cycle and
disconnecting the hose at the outlet of the water valve. If
water leaks by during the freeze cycle, the water valve
diaphragm is likely damaged or the small diaphragm bleed
port is clogged with scale. Clean the bleed port or replace
the diaphragm or entire water valve as necessary.

(I Recommend to get a refrigeration tech for this part).

Another possibility is a refrigeration system problem. You
should use normal refrigeration diagnosis procedures to
check for one of these problems. If the thermostatic
expansion valve is not feeding properly or the refrigerant
charge is low, the evaporator will not form ice as it should
and a long freeze cycle will occur. This could also be the
result of the hot gas valve not closing completely during
the freeze cycle or if the compressor valves are weak or
inefficient. An inefficient compressor however, will
usually show up first on the KM model through a longer
than normal harvest cycle. This is because of cooler
than normal discharge gas. Use proper refrigeration
practices to repair a refrigeration system problem.
While these are not the only reasons for a 60 minute
freeze cycle, they are the most common and should be
checked to resolve a 3 beep/yellow fault LED alarm.

Something wrong with Harvesting cycle, ICE will not come out, coils freeze up.

If you need answers and have not recieved results I will try to help, I see no one responded to your request because the manual and diagnostics info seems to only be sent to people that sell and purchase the machine. If you need help and want answers  you can call me at 864-812-1887 or e-mail me at [email protected]  your description of the problems could be many different possibilities. I want to know and help also. Thanks John Tripp
