The s7000 has three different display modes: Screen, viewfinder, and off. Screen is for looking at the big screen, viewfinder is for looking through the digital viewfinder, and off should turn off all the displays. Try pressing the DISP button once. That should reactivate the screen and make it possible to use the camera again.

looks like you have a dead ccd, reset your camera , if this does not help bang hard with back of your to the base of your camera, last resort take to service for change of ccd

Fuji S7000 shuts itself down...without a reason

remove the xdcard and use compact flash. also put camera in set mode and run the battery drain function. it seems to reset the battery voltage meter. clean batery contacts with q-tip and rubbing alcohol. worked for me

Power on to take picture, but view finder is dark, and snapping a picture, provides a black picture.

Probably the CCD is dead. It's a well known problem with S7000. It's a hardware problem, the CCD has to be changed. For S7000 it usually comes with the lens and it makes the repair quite expensive. It's about 250-300$ here. You should contact your local Fujifilm service center.
I work in a camera service center authorized by Fujifilm.

i think the settings on the exposure or apparture have been modified

reset the camera to factory defaults once to check this and you can have the photos back in order

If you are using rechargeable Ni-MH batteries discharge fully using the camera facility. Recharge and then discharge again. Recharge and hopefully the problem will be resolved.
