The Taylor 430 thermistor model has two adjustments a fine adjustment, which is made by turning the knob, and a coarse adjustment that is made by turning the screw in the center of the knob. I suspect you are trying the fine adjustment, which will change the product + or - 2 degrees F. The coarse adjustment will let you set the product temperature between 10 and 30 degrees F.
As far as the clunking, those machines clunk a little. It would do it more if the product was too hard.
You are correct the machine will leak drops into the drip tray, but if it is more than drops, you want to address it. Should be as simple as a new tune up kit.
