Not to sure about this one, ok, if the choke wont stay out, then try to trace the choke cable to the carby, have a close look and see which parts move on the carby when you activate the choke, some thing just needs to be tightened up, so that the choke stays on. Also, you say the bike stalls and runs rough, is this with the choke on? If yes, then that is just a sign that you dont need so much choke on. Just try half choke. Do you live in a warm climate? if so, then you dont need much choke . So there is no adjustment really, only by the amount of choke you apply. Also remember, never use the choke if the engine is already warm. And, only use the choke for the first start of the day, when the engine is stone cold. The correct way to to start a cold bike engine is, pull the choke on fully, crank over engine, but DO NOT give it throttle, (this defeats the purpose of using the choke), when engine fires up and starts, slowly push the choke in till a smooth, high idle is acheived. You should be able to ride off slowly, and push the choke off after about a mile.

You should have disc brakes??? They are not adjustable.
It is common for a caliper piston to freeze up or become corroded and bind up so it will not move freely.

SOURCE: Should I adjust my valves? 1999 Honda Shadow Ace.

Well if its running good and you don't here any out of the ordinary rattling I wouldn't worry about it until at least 25,000-30,000 miles on the bike so probabley in another 10,000 miles or so have the valves adjusted unless you hear any unordinary rattling noises sooner then go in at that point and have them adjusted.

My 2007 honda shadow starts with choke on but when push choke in dies out

Your fuel mixture may just need adjusting or your carbs may need some cleaning the adjustment is a bit painful as it requires a special tool for the carbs if you take it in for a oil change ask em about adjusting the carbs for you - a good shop will have it done in a jiffy

VT1100C2 Shadow Sabre does not readily start when cold, 30-40 degrees, Help. Thanks

You do not state how many miles you have on your bike. Plugs are probly foul by now. Also you don't say if you choke the engine when you start it. Leave the choke pulled until warmed up. Thin push the choke off.

Will only stay running if choke is pulled all the way out idle screw adjustment has no effect

Take the carburetors apart and clean the slow jets and fuel passageways in the carb bodies. Then bike should idle with out choke.
