Is there a better/ more efficient way to scan a large document (200+ pages) so it doesn't take up so much memory and lock up the machine for 10 minutes?
Yes in your scan setting select scan type in there you will see compact pdf.That will make a 10 meg file be 900k even if it is color.

Unfortunately anything on your original that is not white (paper) will take up memory. You could try using a different file type. PDF and Compact PDF I believe are the smallest. Using TIFF or JPEG will make the files huge.Also if all your documents are B/W make sure you don't have color or auto color selected under you scan settings.
