We have a Breeze air evaporative cooler, but the fan cuts out after about an hour, but if I turn the fan down or up it kicks in again. Also when the unit is running at night it stays on all night. I've had the unit serviced but it hasn't made any difference.

Coolers like yours create a lot of condensate. Every time the door is opened warm moist air enters and changes back to a liquid state on the evaporator coils behind the fan and area you see moisture dripping down from top and back wall should be going down a drain pipe to the bottom of cooler and into a pan where a fan blows warm air over the condensate/water returning it back into the store or business that the cooler is located. Looking inside there shoud be a tray or pan that is at the base of the evaporator. True uses different parts but you need to see why the water is leaking from. If cracked tray or line blockage causing overflow into the cooler. Click Here=> Leaking Refrigerators and then again here=> Leaking Refrigerators! the unit may be knocking off on defrost if the coil is getting v cold,
check for full airflow over the indoor unit/evaporator coil, check filters fan operation and coil condition. Likewise it may be overheating so check the same on the outdoor unit/condenser clean coil and fan operation.
Unlikely but the unit may be under performing and slightly short on refrigerant, not providing enough suction cooling to the compressor motor so the internal over temp klixon would cut it off for short periods, to cool the motor.
most likely has a gas leak and cuts out when the gas pressure drops below its' cut out pressure. nead to find leak and repair, then charge unit to running pressure
mate .. stop playing with it if you dont know what your doin honestly... sounds like you could end up costing yourself more money. it will b under warrenty call back the installer
I believe that because defrost is done by the mother control board this is why this is happening the part of the board that controls defrost is malfunctioning and the only way to resolve the problem is to replace the mother board part number WR55X10656 You can find the replacement board at these places below. You can not make the air coming out of a fan any cooler, as all a fan is doing is circulating air, (creating a breeze) which in turn makes you feel a little cooler. And no, do not pour water into your fan! Hope this helps
If the inside fan motor is still running but you have no air flow it could be low refrigerant charge, dirty evaporator coil, or just leaving the temperature set point to low over night when it was cooler outside, causing the evaporator to freeze up stopping the air flow. Once the evaporator coil has started to collect ice it must be completely defrosted before the problem can be corrected.
Example, It could be that your coil froze due to a dirty filter, which you have now replaced, but the evaporator coil has not had a chance to completely defrost.
I would turn off the A/C but set the fan to on for at least four hours, if you can see the drain from the unit wait until not even a drop of water is coming from it. Then turn the A/C back on and check it, it is important to leave the A/C off the full defrost time, if it is turned on even for a few minutes at a time it will never defrost.
After you restart the A/C if it cools ok for a while then does the same thing again it is probably low refrigerant charge and you should have a service company check it.
