Press the Mode button to get to the Video mode, marked by a movie camera. Press the shutter release button to begin recording, press it again to stop. Full details are in the "Video Mode" section of the manual, beginning on page 27.

There is a reason, and it's not one you're going to like. The ViviCam simply does not record sound with its video, lacking a microphone. It was designed as a still camera, with a few additional capabilities grafted on.
