I literally had the same exact problem yesterday and last year. Perfect from start up to about 2 hours in...then sounds like it's bogging down, then dies at a trail stop. Fired right back up in about 2 minutes. Also it happened on a lake burn..wanted to die, so I feathered the throttle, came right back to life just as strong as it should be. It has me stumped. If you figure it out, let me know and I'll do the same. Mine is an 03 Edge 800 XC SP.
NO! Check the boot between the carb and engine. Very common problem for aged rubber is non-visual cracks. Pull it off and check the boot by kneeding it and looking at it under a light.
Sounds like you may need a valve job. Have you been keeping the valve clearances adjusted? It's important to do that on a four-stroke engine. Check your compression to find out if the valves are ok.
sounds like an overly rich condition when you let throttle snap shut no air enters or at least minamal air enters the engine and with to much gas the engine will bog down until the extra gas burns off(5 seconds) check floats height and make sure jets are secure and make sure the choke is all the way off
