I had a similar problem when I first connected my son's xbox using the Audio/Video cable (red, white, & yellow connectors). I connected the cable to the TV correctly, but incorrectly selected "component" as the input on the TV setup. Result was black and white display. Switch your TV input mode to "AV" or "Audio/Video" and you will get color.
FYI, "component" TV mode is only used with devices that use the red, green, & blue connectors.

change the output on the xbox in system settings > console settings > display from pal to ntsc or ntsc to pal. That is the reason it is showing in black and white
Are you using component cables (Y=green, Pb=blue, Pr=red, white, and red) ? If so try changing the component cables. If the picture is still coming in in black and white try another device besides that DVD player that has a component output. If a second device is coming in in black and white with a new component cable then it is the television.
there are three wires associated with "component output" .. those have to be hooked up to component inputs on your TV .. not to the composite video input .. if you do hook up to composite you will get only a black and white picture .. make sure all three wires are connected correctly then select the proper input in your TV setup ..
If you're in the US, then your problem is you're using a PAL system with NTSC games. Also, it may be that the system is outputting in PAL format to an NTSC TV, but I'm actually not sure if TV's are region formatted as well.
