If it comes on and runs but will not continue to run, I would be looking at the flame detector. If the detector is faulty, doesn't see the flame, the unit things there is no flame and closes the valve.

If its in its sheet metal holder and facing up it should be ok
Are you switching the red knob to pilot and holding it down keep it down while lighting and for 60 sec then let it up slowly and turn to on.. then it should stay lit and main burner should lite

Quit screwing around and shut gas off at tank valve and call a professional ASAP!!!!!!!!! This is a serious and quite dangerous situation. Fixya is full of people who think they know. This is a situation needing a hands on experienced professional,not a bunch of whining incompetent egocentric morons.
With FVIR protection: Get more fresh air to the unit. Clean the flame arrestor screen. Test and replace the thermocouple: http://waterheatertimer.org/How-to-test-water-heater-thermocouple.html Inspect and clean burner and combustion parts Test gas pressure, bleed air out of gas line. Replace gas control valve. Test draft air by lighting match and see if smoke is pulled into the vent pipe at draft hood on top of tank.
Make sure thermocouple tip is seated inside the burner flame. Make sure thermocouple is not overtightened. Finger-tight + 1/4 turn. If the pilot lights, then ECO energy cut off is not tripped, but gas control valve might be bad. Check color of pilot flame: it should be strong and clear blue. If pilot flame is weak, or color of flame is yellow-orange: Clean pilot orifice and burner and combustion parts on yearly basis. Clean air intake screen if applicable. Increase air supply to water heater. Open a window and see what happens. Check for adequate draft going up chimney using match under vent hood to see if smoke drafts immediately upwards. Bleed air out of gas line. Check gas pressure.
Most gas water heater problems can be solved by having service technician perform yearly maintenance. Or by doing maintenance yourself. This maintenance includes cleaning burner parts and combustion chamber, checking gas pressure and supply, bleeding air out of gas line, checking vent draft, making sure air supply is adequate and not exposed to chemicals, cleaning air intake. Also adjusting flame sensor so it is positioned correctly. If water heater is connected to electric circuit, the outlet must have correct polarity.
You can get gas to appliance indicates the gas control valve and water heater are not locked out. But the gas control valve thermostat can still be bad.
I am not aquainted with the Bosch..... But it is a heater. I am going from past experience with gas furnaces and how the process works..... You said that you can get the pilot to stay on if you unhook the Main Gas Valve wire. Do you have 24 Volt power on that wire to Common? Does this have a Flame Sensor? Maybe it got damaged. Does it have a good ground from the burner to the ignition control module? Does that wire to the electro valve go into a plug that plugs into the ignition control.... Maybe that pin is not making contact to the board. Hope this helps If no one else answer right away repost Or call and see if you can get Tech support from Bosch..... I know how frustrating it is you buy something brand new and it doesn't work
