Sound like you need new shafts or paddles and I know the paddles can cost $30 each. so think about a new model or buy one at a thrift store and try those paddle or use the machine. I got a great one for $10 . :)
There is supposed to be a removable small paddle in bottom of pan.
If it's not there, you will not get dough at all. Just wet flour.
If paddle is there, but you have half way dough.. AND you followed directions exactly, machine has a problem. Take it back for refund or exchange.
Try searching on online auction sites...I have purchased extra pans, and paddles??? I dunno what the professional name is but be sure to list the model and name properly, Welbilt?? Wellbilt?? Numbers are usually visible with a flashlight at an angle. Hope ya find it!!
I had that problem once, I made the mistake of putting in honey in the bottom of the pan BEFORE I put in the grain. It got into the paddle area and got hard and the paddle was stuck. I poured boiling water into that area several times, and it melted the honey and solved the problem. Not saying this is your problem, but it could be.
