Yes you need water to make it steam heat so your dishes do not burn

    From Nesco:
    Despite a long standing rumor, there is absolutely no need to put water in between pans when cooking in a NESCO®. The patented NESCO® Circle of Heat® provides consistent, even cooking throughout. Water will actually slow down the cooking process, and make it more difficult to clean up.

Refer to page 6 for complete instructions.

You do not add water or anything below the roasting pan. You fill your roasting pan 1/2 to 3/4 full with water, place in the empty serving dishes, then preheat at 350 degrees until hot (about 1/2 hour).

Then fill the serving dishes and reduce heat to 250 degrees. You may need to adjust heat and more hot water if necessary.

No, you specifically DO NOT put water in the base between the roaster and the cook pan, this actually interferes with cooking.

If using with the buffet server insert, put a couple inches in tn the cooking pan below the buffet pans.

Do you have to put water in the first pan to cook a turkey?

Absolutely not. This is an oven, not a steam table, and water in the main roaster actually interferes with heat transfer. Water in the roaster cooking pan (the inside pan) actually steams the turkey, not a yummy solution.

Putting water BETWEEN THE BASE AND THE REMOVABLE PAN *is like putting water in your crock pot before inserting the porcelain dish and lid. This is dangerous and will destroy the unit. Those who answered "Yes" do not realize that the ? relates to putting water in the electric heating element portion of the pan... DANGEROUS!
