I do not have the stainless steel backsplash, I had a custom stainless steel piece made that keeps the back flat into tile. When I am using the burners, and than turn on the oven, the burners go out and the igniters start clicking. Does my unit need sometype of ventilation at the rear. It seems this problem started happening after this install.

Backsplash will not cause a problem unless this was the only open air space of the oven, if both left and right and back of oven are closed, this may cause a shortage of air to the oven. half inch to right and left of oven should be enogh. let it breath.

Heavy duty construction adhesive

Ceramic is particularly difficult to bond to due to the polished surface. The shelf you describe is probably heavy, but you have no dimensions or weight provided. I see these shelves fail frequently when they are only "glued" to the wall. It should have been installed to the wall first with a bracket arrangement, then the wall flashed and tiled around the shelf (presuming you have tile walls).

I would recommend that you use stainless steel brackets fastened into the walls (may require using toggle bolts - be sure to run the bolt through the bracket first!) to support the shelf. Use brackets at each wall, then use silicone sealant over the fastener heads. Use the largest brackets that the shelf will allow, you might be able to just epoxy the shelf on top of the brackets rather than trying to install fasteners into the shelf piece, which might break it.

try paint thinners , but before you do any thing you need to call the workman to see what brand of glue he has used.or to come out and clean it off for you or to see if thinners will work , it normally does but when i do resturant kichens out any spillages of glue is removed straight away.you will need to use polish cleaner after the thinners to stop any further marks appearing

the back splash should be held on by silicone or glue very seldom are they screwed on i would bet it is stuck with adhesive silicone so score around the outside of the splash with a utility knife the remove it scoring around the outside will prevent sheet rock damage
