Bread burns on outside but not fully cooked on inside. Using programme13. 1/4 steam
I'm no pro, but it sounds too dry in there to me. I don't know anything about your steam oven, but I bake sour dough in a cast iron crock pot with a lid, that keeps the steam from escaping and the bread from drying out. I take the lid off the pot for the last 20 minutes to cook up the crust a bit. (I have the pot in the oven when I preheat it, so it's nice and hot when I put the dough in).
Some people put ice cubes in a small tray in the bottom of the oven to keep the moisture in there. I have tried it (once) and it seemed to work fine.
Sorry I can't help with the steam oven though.

ladder, here are some suggestions to try to help you with this problem. Make sure that you wait another 10 minutes to put your food in after the preheat light goes out or tone goes on. The manufactures like to get that energy effecient label on these ranges. If your utensil is dark, darkened by age or glass, these will absorb more heat and can cause over browning. Lower the oven temp for these types of utensils or use a pan with a shiney finish. Make sure the utensil is not too close to any oven wall. Do not check for doneness until minimum recommended baking time. Opening the door frequently causes the lower element to cycle and provides too much intense heat. Use the second or third rack from the bottom. Finally, check the owners manual for calibration instructions. You might be off with that. Catriver...post back.

Unfortunately trying to stick the paddles in the pan just tends to leave half the loaf in the bottom with them. The best method i have found is to cut the crust around the outside of the paddles, carefully avoiding the bit where the actual paddle blade is, then you insert a rod into the centre of the paddle and tilt it towards the blade. They normally come free pretty easily. Another method you can use if you are around the machine when it is making bread, is to remove the paddles at the end of the mixing/kneading cycle, just before the baking cycle starts. Most machines have a small pause allowing you to do this - sometimes with a "beep" or screen message to tell you that you can do this. Sorry i couldn't find the exact info for your model, it will vary for different baking programs also. If you check the cycle to determine at which stage it starts actually baking, then you can do this quite safely so long as you are careful of the machine heating up while you are removing the paddles - usually you would have around 20 minutes at least to remove the paddles before baking. Sounds like the igniter is not operating at full capacity. What happens is that the oven does not light when it should. Instead, the oven is cooling down much too far so when the oven does light it has too heat more rapidly. This causes the outside to brown/burn long before it should.
