1.As you unpair your Apple Watch and iPhone, keep them close together.
2.On your iPhone, open the Apple Watch app.
3.Tap All Watches under the My Watch tab.
4.Next to the watch you want to unpair, tap the details button.
5.Unpair your Apple Watch by pressing the Unpair button. Choose whether to keep or remove your cellular plan for GPS + Cellular models

You didn't mention which iPhone model it's paired with, but here are two things you could try:
- erase the Apps on you watch and on your iPhone, and reinstall them.
- using your web browser (Safari), search for "how reset your Apple Watch 3"
