Head removel wat all has to come off in order for the head to be removed

This depends on the vehicle of course but for the most part you can figure on removing a few things for sure, they are:
The Intake manifold and related components, the exhaust manifold or header off of that particular cylinder head, and brackets including those that hold on accessories like your p/s pump, alternator, A/C Compressor, Etc, If you have a timing chain that runs through the head and onto can gears/sprockets(or a single gear) then you must remove the timing chain as well. You'll also need to remove the valve cover, then loosen the valve train and remove all of your head bolts(usually 8-10 per head) and don't forget to use new head bolts and quality gaskets torqued to spec when reassembling, the bolts are a necessity as many factory head bolts are designed to be use once. If you want to know more about that goodlgle "Torque To Yield Head Bolts", basically they're made to be torqued down once and replaced if ever removed. That's should cover it, please include the make/model/engine of the vehicle you're working on next time for a more specific answer but that'll cover 95% or more applications.

How do I replace the old head with a new one?

Your old head should simply unscrew from the gear box. You should not have to disassemble the head to get it off. Some models have a small hole above the gear box where you can insert a small screwdriver to lock the drive shaft so that the entire unit stops spinning. Keep in mind that some models have left-hand threaded heads while others have right-hand threaded heads. In most cases, you'll unscrew the head opposite of whichever way the head normally turns while you're trimming. This is by design so that the machine doesn't unscrew the head itself while you're using it. You can find replacement heads for most makes and models of trimmers at PartsBuggy.com.

While kneading bread my mixer suddenly starting hanging up at the back side. It makes the full circle but when it gets to the back it stops and "hums" and then sometimes will go on but most of the time...

It sounds like you have lost some teeth from your worm gear. This usually happens when the mixer has been overloaded. The teeth on the worm gear are designed to fail first to prevent more serious damage. To replace the part you will need to open the head on your mixer. The gears are at the front of the mixer packed in grease. It should be obvious that the worm gear has broken once the head is open. If it is not the worm gear, with the head open it should be easy to spot the problem. The gears are available as spare parts from several places on the internet. search for "kitchenaid worm gear"

The simple and most expensive solution is to replace the ice maker assembly. They sell for between 50 bux on e-bay to 150 bucks at Sears. From what I have seen most ice makers fit the same category and they look like they are all designed and built by the same company!!

The main problem is the gear on the backside of the unit snaps off for various reasons like ice cubes getting stuck and causing the ejector rake to jam, thus overloading the flimsy gear and snapping it off. You can not purchase the gear however you can choose to buy a gear-head assembly for 80 or so bux.

I repaired the broken gear on mine using some structural epoxy. Here is a pic of the repair in progress, The green stuff in the center of the gear is the epoxy I used. Good Luck!!

I have a brand new I-Mac with Snow Leopard. I just bought a Gear Head KBL8000WRBT keyboard and mouse set. I started with the mouse. The computer recognizes it, but won't pair with it.

Since iMacs are not primarily designed to run with equipment like this (They can run it, but the equipment usually says 'No! I don' know what you are!') Try using the apple Magic mouse. (I'm not sure if they have a W/L keyboard.)
