This depends on the vehicle of course but for the most part you can figure on removing a few things for sure, they are:
The Intake manifold and related components, the exhaust manifold or header off of that particular cylinder head, and brackets including those that hold on accessories like your p/s pump, alternator, A/C Compressor, Etc, If you have a timing chain that runs through the head and onto can gears/sprockets(or a single gear) then you must remove the timing chain as well. You'll also need to remove the valve cover, then loosen the valve train and remove all of your head bolts(usually 8-10 per head) and don't forget to use new head bolts and quality gaskets torqued to spec when reassembling, the bolts are a necessity as many factory head bolts are designed to be use once. If you want to know more about that goodlgle "Torque To Yield Head Bolts", basically they're made to be torqued down once and replaced if ever removed.
