Can a Sony xplod 500 watt amp drive a 600 watt subwoofer???still learning the ropes????

Yes, what you want to look for is the impedance of the woofer. Its rated in ohms. Typically 4 or 8 ohms. For example if the amp says its 2 ohm stable dont go below that. So one 4 ohm speaker is ok, two 4 ohm speakers parallel wired together makes 2 ohms that is best, 3 will have the impedance too low 1.3 ohms and will damage the amp.

Yes, speakers are rated by power handling capacity, Having an amp with less than the power handling o speaker will not hurt anything.

Without looking up the individual specs of your speaker and amp, I'll offer a few basics when it comes to bridging an amp.
Most important...find out what impedance (ohm) that your amp can handle bridged!! If you go below this rating, you will run the risk and most likely eventually overheat and short circuit the amp. You must also know the impedance of your sub (which can come in a variety) to be able to match them. Depending on this impedance match-up, it may be less beneficial to bridge the speaker to this amp. For example if there is an impedance mismatch you'll either get less power from the amp or short circuit the amp. If you know these I can help you come up with the best solution.
If you know bridging is the best option, then you'll have to know which terminals on the amp to use in order to bridge. This is how it normally works. On a 2 channel amp...you would normally take the positive from one channel to the positive on the speaker, and the negative from the OTHER channel to the negative on the speaker...and this is how you bridge the amp. The other two channels would remain UNCONNECTED. BUT!!! you have to make sure you use the correct 2 channels...it varies from manufacturer. But take heed not overload the amp...and not to overpower the sub. There are a few different ways that you can configure the subs if you find it beneficial to bridge your amp, these would take long to explain and would depend on the impedance of your subs and specs of your amp...these wiring configurations is how you match the impedance of the speakers input to the amps output (and is very important to do correctly) Look up "parallel and series" wiring configurations. wire each sub in series inside the box, this makes them each 8 ohms, then run them parallel from the box to the amp bridged. this will give you 500 watts at 4 ohms

I have an sony xplod 4 channel 600 watt amp

First are they in the same box? If so and they are sharing the same air space running one amp to both is best andwill perform better. One woofer could be over powering the other and or you could have a woofer problem. A lso your wiring coul be problem. When amp is bridged it changes the OHM reading and output your other woofer may not be rated at or able to handle a lower Ohm rating also it coul blow that woofer if it hasn't already hapened . Be careful. check woofers independently for operation and check the non performing woofer on an unbridged power source or amp. Hope this helps. Write back if not.

Amp big enough for speakers

No amp is too big, you can turn the gain down. Anyway in my experience people tend to blow up their subs with underpowered stuff anyway (power spikes from clipping). Your amp is rated at 11000watts max and will probably only put out 500 or 600 watts RMS - RMS by the way is the number you should go by. It indicates the usable output w/ out lots of distortion. On the flipside you can power high wattage subs with an underpowered amp and be just fine. However if you wish to extract the most you will need to match amps and subs. A good example of under powered sub applications is in some of my work- I built a wall of nine 12" subs in a bronco, we competed in a 50 watt class and cleaned house taking first in class. Another would be a 150x2 watt amp driving two 15" CV Strokers (1200 watts each). I was going to compete in that class but they made me move up becuase I was an installer at the time. I was upset at first but after my first try I was able to get about 146db and went on to take first anyway. So if the enclosures are built right you can still use that kind of setup. I hope this was helpfull. If you are concerned with exact wattage ratings the manufactures websites should list them. Good luck.
