Fixed - Hotsync all your stuff to your desktop. Remove any cards, and do a cold boot (press reset while holding down power button)
Then synch everything back again. I'm never buying another palm again.

You actually probably created the new account as an admin. You don't really need to recover it. You just use this account as your admin account. You can then create another non admin account now and have everyone else besides the "admin" likely being you, can use the non admin account. All your files can still be found in "rootdrive:\Documents and settings\administrator
There you can find all your documents that you had in My documents under the administrator account.

reapplying the user won't help the case,
all you can do is:
you may have to find yourself a good unerase program(try pandora!) to find the deleted data, try to restore(they may be still in good shape, just try) all the files into one folder and then manually choose the data you want back.
A full restore of a once deleted user is almost impossibly, but remembering the actual programs and filenames you had saved on your harddisk may help a lot!

Im afraid it's not possible. After you delete an app, everything goes with it. It remembers your username because of online registries for the app but nothing else. The data you want is stored on your ipod touch. The only way you could've saved it is if you backed up your ipod touch with itunes before you deleted it. Backing up in itunes saves all "in-app" data as well has what is on the ipod touch itself.....Sorry
