Put the briquettes in the bottom pan and put the wood chips around the outside edge. Put water in the top pan. All this must be done before you light the charcoal. Using an electric lighter works best and won't change the flavor of your food like starter fluid will. After coals are lit, place meat on rack and seal everything up. Now you're Smokin'!

Dip wood chips/chunks in boiling hot water for a few minutes if you're in a hurry or allow to to soak in tap water for about an hour if you have plenty of time. Either way, place the soaked chips around and under the heating element at the bottom. Don't throw out the water; heat it up and pour it in the water pan. Heating it up to boil will give your smoker a good head start. I've been doing that on my char-broil smoker for years.

Buy some lava rocks from your local hardware store. Get just enough to cover the coil with 1 layer of rocks. This will help control and retain the heat produced by the coil. Now, just throw a couple chunks of pre-soaked wood on top. I recommend hickory or cherry...never mesquite, it is way too harsh for slow smoking. Happy smoking!

Check for power at your outlet; a tripped GFI or a tripped breaker in your panel box may be the cause if the outlet is dead. If the outlet is good then you know it is the electric smoker.

How do you burn the wood chips

The pre-soaked wood chips are placed in the cylindrical wood chip holder on the side of the unit and then inserted into the smoker above the wood chip tray. The wood chip tray must always be in place prior to loading the wood chip holder.

Exactly how does the charcol come into play not exactly sure where to place it.

Debbie, unless you listed the wrong model number for your Masterbuilt Electric Smoker ... Electric Smokers don't use charcoal at all. They use wood chips, that are placed on the wood chip tray, just above the burner. The smoldering wood chips generate the smoke.

Where do up put the wood chips in the electric smoker?

I'm smoking a turkey right now and I'm using this method:

This electric smoker wasn't designed (in my opinion) for chips. In fact, the manual suggests chunks and sticks. Too bad though since my local Bass Pro Shops store sells a great selection of chips.

We'll see. It seems the above method is working so far. Just let the element heat up to glowing first.
