How long and at what temperature should I roast a 6 pound leg of lamb?

20-25 min/lb for med rare (145)
25-30 min/lb for medium (160)
30-35 min/lb to dry it out and make it tough (170)

This is cooking at 325. But don't go by time. Get an instant read thermometer or a probe thermometer and go for internal temp as deep into the roast as you can get the thermo without touching the bone. There are too many variables in cooking roasts to judge by timing.

Smoker Temp: 225 F
Meat Finish Temp: 135 F
Recommended Wood: Oak/Cherry mix

*highly recommend you use a thermometer, cooking times vary and doneness is indicated by internal temp.
