Don't touch the blade by hand use a pair of pliers. There should be a screw in the center of the handle, just remove it and you will see how to remove the blade.https://youtu.be/pFnbiw88Z8c
I agree. The packaging is ridiculous.
I removed it by grasping the packaging and pulling (very hard) from the blade end (bottom left as looking at it) straight out. This stretched and tore the plastic "paper" and pull the knife free.
Press and hold the "+ - units" button and hold for over one second. It should then let you select your units of measure. In this case it should be the second selection, which is "0.00 ft".
