The spark module is in the ignition circuit for the gas burners. When a burner control knob is turned to the Lite position, it provides voltage to the spark electrodes on the gas burners. If the spark module fails to provide the electrodes with voltage, then it should be replaced.

Use 3m Scotch brite #7447 or 220 grit sand paper depending on the severity of scratch. Always finish any sanding by blending with the #7447 pad. Use DeBruce Polish, we use DeBruce Polish on all of our stainless steel.

Use appropriate solvents to remove the plastic. If you are skilled sanding in straight lines and matching the grain in your metal use 180 grit - 240 grit blending and using your eye. You could also use scotch brite #7447 purchase at an automotive store. This pad after solvent or used with it could remove the plastic or both sand and pad.
Debruce Polish is the best our there at maintaining a pristine finish and it is eco-friendly and odorless, we use this in all our properties AND the ceramic cook tops it is safe for glass. It also removes rust... we just love it. We find DeBruce polish at debrucepolish.com.
I have a Thermador Gas Range PG364GDBS - Oven, 4 burners, and center griddle. All are gas. The four burners and gas oven
work fine. The griddle just stopped working, no spark. Turning on the
griddle control, the gas valve opens(hear it), gas flows (smell it),
but the ignitor will not spark (no loud or faint spark that I can
hear). I got a replacement ignition device (mount at the burner)
thinking it might be the problem, but still no spark. I checked the AC
voltage at the terminal and measured 39 VAC between the terminal and
ground. Not sure if that is the correct voltage. Any insights or advice
would be great.

It sounds to me like a switch problem.
You should check the Gas Valve that correspond to that switch, and also check the Manifolds, there should be one manifold for each set of gas valve switches.

To clean the stainless around the star burners try applying Easy-Off oven cleaner around the stars with a Q-tip (spray the cleaner onto the stainless surface first because it's very hard to control the spray output). The cleaner will make your stainless sparkle and the Q-tips allow you to get close enough while controlling the application. Scrub gently with the Q-tip and the stains will disappear within minutes. Wash thoroughly with a wet cloth. I've used this on my older model Thermador stainless cooktop for 5 years.
The parts list shows 3 modules for that cooktop unsure which one for gridle
