I had the same problem. Had to strip the machine down to get to the motor. On the top is a moving plate with various capacitors etc mounted. On the front side there was a Capacitor (At least I think it was) with the wire broken.
I resoldered it and the machine now works fine.

I hope this helps

Blakeslee A717 Commercial Mixer With 7 Quart Bowl. The snap ring on the dough hook doesn't hold.

It is not a make I have heard of before, which is odd, because I spent 50 years in catering and hospitality. Parts are available according to this. Getting to the snap ring would be the issue. You may be able to pull the old one out with a right angle pick and push the new one in.

Blakeslee Uni mixer model A702 I moved the lever (front top) side to side and it appears that the mixer is now out of gear. not sure what I did miixer worked great before that?

These machines were designed to disengage the gearbox when the cover (where the blender goes) is removed, the theory being less gear train resistance more power to spinning knives/blade. Is this the cover that you are referring to?

What kind of oil use this

I came across a manual for a Blakeslee f-40 60 80 and here is what it said. Hope this helps

Lubrication
The planetary and spiral-beveled gears are self-lubricated for life. The lubrication used is micromly grease and must be re-applied if gears are replaced. The transmission uses Mobil "delvic 1" synthetic oil which should last the normal life of the mixer. No lubrication is required for the auxiliary drive hub.
If lubrication is applied to the auxiliary hub a grease-like substance will possibly leak out causing damage to the product.
Applications of any lubrication will Void Warranty.

My older blakeslee mixer model b12 needs oil

The B-20 takes 50 SAE HD oil. I noticed that it doesn't stink like gear oil but is still pretty goopy. I think Mobil 1 Delvac is suggested. I think 30 weight would be fine for your machine, as well.
