You can delete content in any number of ways. Settings>Geneural>Usage>Storage will show what is taking up all of the space on the iPad. This should help.

My ipad has too much on it I need to clean unwanted programs and leftover bits from deleted programs

If you go into Settings > General > About. You should see all the information of your iPad. You will notice how many songs, videos, photos and applications etc.. you have. Also the capacity of the iPad (in terms of GB). Keep in mind, approximately 1-2GB of data is used by iOS7 (or whichever software update you have). Hope this helped!
