Replace bearings and races. Do not mix old and new parts

the oil goes straight from the pump to the oil filter then to all of the bearings and moving parts
if there is no oil in the filter you have not done the overhaul properly and it won't be long before you have bearing failure

Normally when you start a cold engine, the revs is up and drops after the engine warms up. That is norm but if you say the revs goes higher after warm up, there could be many issues to check like leaking vacuum pipes, throttle lever if stuck, throttle position sensor etc

If you are deep into repairing a differential you should know about bearings. Therefore I'm politely suggesting you need trained assistance in what is a very technical procedure requiring special tools and previous knowledge. Its not a front driveway casual fix.
