Dishes of Chiang Mai
This is an answer, even though it is long it is really just the tip of the iceberg. The cuisine of Thailand is vast. This list is just and opinion:
1. Khao Soi ( egg noodle curry).
2.Khan Toke ( it's similar to a mini-buffet) usually accompanied by folk music and "the finger-nail dance".
3.Sai Oua (grilled herb sausage) made with ground pork, shallots (You can use green onions if you like), garlic and dried chilies.
4.Kanom Jeen Nam Ngeow (rice noodles and soybean curry).
5. Tam Khanum ( young jack fruit salad), I have no trouble getting mature jack fruit, but I can't find young jack fruit.
6. Nam Prik Ong and Nam Prik Nmue (red and green chilli dip). This is served with a crudite ( assorted raw veggie platter).
7.Larb Kua ( pan-fried spicy meat salad) Its' made with either beef,pork,chicken or fish...along with the blood and internal organs( I leaves that out...YUK!) I have no shame in that.
8.Gaeng Hoh ( mixed curry) it's made with glass noodles, pork belly(I use pancetta or bacon),shrimp paste, chilies, assorted vegetables and herbs.
I hope this has helped you. If you need specific recipes I found a fairly good on-line source. GOOD FOOD.com. You may have to get creative as I did when you can't find the ingredients you need. The best source for these recipes is a Mother or Grandmother from Thailand who would be willing to teach you (good luck finding one...just beware of those yucky ingredients) Ha Ha.
