If it was a fuse, it would blow and not run again. They do have a device called a 'clixon' that senses overheating. It could also be a faulty Run Capacitor. There is a relay for the compressor according to this.
a commercial freezer should have it's own defrost cycle. I would look into what the issue is that is causing you to do a manual defrost.
The 2 most common AND safe ways to defrost any freezer is either using hot water or a hot air source such as a hair dryer.
Check if the condensing coil(the one by the compressor) is clog with dirt or grease ,if yes unplugged and clean it real good with a degreaser , also make sure the fan works , if all this is ok and you see the coil inside is partially frozed up ,could be that is low in refrigerant what means there's a leak that has to be fixed before recharge the unit.
look around the back of the freeze and at the bottom you will see a small black compressor .Put your hand on it and if it is running you will feel it vibrating. If it vibrating but running very hot them it means you have no gas in the system so the freezer won't freeze. If the compressor is cold and not running then it could be eaither the relay on the compressor or the board on the front either way you will need to get an engineer in
