If the cooling system is working correctly, the only thing the thermostat does is make the engine reach normal operating temp in a short period of time. The engine is designed to run at 190 - 210 degrees as much as possible.
If you leave the thermostat out, it may run cooler, but you will get a check engine light at some point in time if the engine does not reach 190 degrees within 5 or 10 min. And when the check engine light comes on the performance will drop off. And it will use more fuel.
