I am not shore exactly Where the safty stat on that model is situated. Check right underneth the controlle box underneth the oven there should be a little round plastic screw cap looks like a fuse holder unscrew cap and press the reset button. If it is not underneath the oven switch off main power supply and open back cover on oven and look for safty stat (all though there is 2 types of stats )1st type is a square silver box with 2 or more electrical wires connected to it with a thin silver wire on it that goes into the oven baking chamber and it got a small red reset button on it just press reset button.2nd type looks like firs type but do not have a reset button this one will have a dial on it. "If it is 2nd type it can not be reset it needs to be replaced"but you can turn the dail and listen out for a click sound if you can hear a click sound it NORMALLY means the stat is still working and you got a nother fault somewhere if there is no click sound replace stat with one that got the same values as the original stat and make shore you set it the same temperature the original one was set on

Fisher Paykel OD302 double wall oven. Exhaust fan assembly (vent fan) wiring.

get an electrician in to fix it
the red wire is normally the active (power wire) and the blue is the neutral wire
if you fit the blue to a red terminal then you could be dead, blow the circuit or blow a circuit breaker
be safe call an electrician

During cooking the oven goes off. There is often a lot of water/steam present. Sometimes after a while it comes back on?

It could be that the overheat thermostat is kicking in, albeit earlier than it should do. Have you checked to see that the oven thermostat is working correctly and is not heating the oven up too much ( does the neon go off and on) and is the oven cooling fan running ok in the background. If these two appear to be ok, then you may need to replace the overheat thermostat.
(The oven cooling fan should remain on for about 5 to 10 mins after either oven or grill has been used. If this isn't happening or it is not running correctly then that is why the overheat device is shutting the oven off). As a thought, are the top oven and grill working ok? if they are, then it narrows it down to either the oven thermostat or the overheat sensor.

Electrolux eog 7330

there is an overheat stat somewhere inside the casing - sometimes on the top[ and sometimes close to the fan. this may be a resettable stat - ie has a little button in the middle to reset.
another way is a thermal fuse - a little cylindrical thing inside a heatproof plastic tube

Overheating?

yes - it is cutting out on overheat. there are two fans - which one was replaced - cavity fan or casing fan?

possible reasons are:
faulty casing fan
not enough ventilation
faulty overheat stat
faulty fan stat
oven operating stat faulty but you would be burning your cooking in this case

Oven heats up then switches off

there is an overheat stat in the oven which turns it off if overheating. the causes are several. 1 - oven thermostat is faulty and oven is reachingf too high a temp. 2 - there is a second fan in the casing to keep the casing cool. 3 - this second fan is turned on by a fan start stat which may be faulty and is not starting the cooling fan 4 - the overheat stat itself is faulty. it is a bit difficult to narrow it down from afar. get back to me if you want
