Why do burners pop and flutter

If this is a milivolt unit, meaning no solid-state or computer/digital controlled. You would need to turn your gas valve to the pilot position, then press in and hold until you can light the pilot using a lighter (this may take several minutes, to bleed the air from gas supply) once there is a pilot flame present, you will need to hold the valve button in for about 45 seconds to heat the thermalpile. Once pilot is lit, thene turn to on position and proceeed to turning thermostate to set temp.

Its a simple design. If the thermophile does the work of powering the fryer control. Do you have a good pilot flame? If the pilot flame ain't good enough then the millivolts won't be enough to operate the solenoid on the gas valve. Most folks replace both the pilot and thermophile on these fryers since the grease makes such a mess of everything. If the pilot generator is fine then the gas valve is next.

Make sure that the gas pressure is standard (as rated on nameplate), thermopile must be clean (no dirt or soot) and the thermostat is good.
