The message centre ensures that your text message is sent to the recipient. If the wrong message centre number is saved in your phone, the text message can't be sent.

You could use the "Respond with text" feature. Settings/Phone/Respond with Text/ change one of the three options to your line of text. When you get a call press "Message" and select your text. Your text will be tacked on to the end of "Can't talk right now...". If the caller is a land line, or other phone that does not accept SMS this will not work, you will probably get a text from your mobile provider indicating an error.

try to restore it with factory settting but before doing so backup your data and remove your memory card

When you receive a text message while you're talking on the phone you can read your message without getting off by pressing the envelope button on the lower right side of the phone and the message menu with appear then click text messages
